Shrimp cocktail consists of cold boiled shrimp served with a ketchup and horseradish cocktail sauce. Guests dip the shrimp into the tangy sauce. A staple appetizer at buffets, shrimp cocktails offers a great-tasting, lighter option than rich appetizers. Though a simple dish, it can be lavishly displayed and make a big impression. Serve Individual Glasses

Peel the shrimp, but leave the tail on as a handle for holding the shrimp while dunking it into the cocktail sauce.
2Pour 2 to 3 tablespoons of cocktail sauce into a martini glass for each guest.
3Hang 5 to 6 shrimp around the rim of the glass with the tails on the outside of the glass. Serve each guest a single martini glass with the shrimp cocktail.
Display in a Floral Arrangement

Wrap a snow pea around the widest part of the shrimp and hold it in place with the tines of a cocktail fork.
5Insert the handle of the cocktail fork into a piece of florist's foam to stand the fork on end with the shrimp at the end of the fork.
6Arrange silk flowers in the florist's foam around the forks to hide the foam.
7Place a large bowl of cocktail sauce in front of the foam display with a spoon in it for the guests to spoon the sauce onto their plates.
